The big 100 restaurants
Via Professor Althouse, the 100 highest-grossing independent restaurants in the United States. I love Washington's Old Ebbitt Grill and it is obviously a money machine, but I had no idea that it was the 5th busiest restaurant in the land.

I'm shocked at Old Ebitt's statistics. I love it. It is always busy - but doesn't have the feel of a "factory"

A million meals, 360 days, 430 seats means 6.5 turnovers per table, every table, every day?!

There are quite a few in NYC. I wonder how this list would change if they go through with their plans to outlaw salt in restaurants...
